Evil Ways…baby!

07 Evil Ways (enjoy the tune by Santana) I think they’re gone…for the most part! Since mid January, cold turkey, we changed our evil addiction to carbs! Yep, gone from our lives…well, mostly! Once you adapt to this eating lifestyle, the cravings for sweet, and even salty foods start subsiding.

The most difficult part of the diet is the additional time for grocery shopping, and the extra time in the kitchen. Also, I must say it is much more costly to shop for fresh, and organic foods rather than processed foods. I don’t think I’ve ever seen coupons for fresh beets, or baby carrots, or even brussel sprouts! I mean seriously, how cheap is it to whip up a delicious pasta meal with fresh warm bread! That is something I haven’t allowed myself to enjoy since January! That is the hard part, because I love fettuccine, ciabatta, biscotti, all those things, but I’ve changed!

The nice part, is the big guy too has adopted this new lifestyle change. And although he doesn’t share in the task of cooking, he is 100% enjoying the new food line up too! It’s great to have someone diet and eat healthy along with you! So, Saturdays we stop at Fresh Market for organic eggs, hormone  & antibiotic free chickens, beets, fresh pinneapple…etc.! (Of course the big guy is lined up with the kids for a free cookie, the only time the guy will get a treat because they are off the grocery list! Mike is not quite set free from goodies 01 You Keep Me Hangin’ On Enjoy the Tune by Vanilla Fudge!) These fresh chickens are now cooked in the crock pot for Mikes lunch, no more lunchmeat or processed foods!

And every dinner includes a huge salad, fruit and veggies. Sometimes salad is the dinner, other times perhaps, I also serve salmon, or crab cakes or chicken or some other lean protein! But always a salad and at least two vegetables are served with dinner!

Mike does have Special K in the morning, and a 100 Calorie bagel with his chicken at lunch, but I do not indulge in those simple pleasures! And no more granola bars, and pretzels, and animal crackers and cheez-its!  Also gone are  breads, crackers, processed foods and frozen lunch meals. I have allowed myself a few Way Better Snack chips from Fresh Market a couple of times on the weekend.  These chips are  blue corn chips made with flax, chia seed, quinoa, radish seed and other good stuff. But besides that, no special treats!

Saturdays are my baking day for the week!  No more grocery store muffins! So baking now includes Almond flour. I’ve given up the processed white flour! I have found that Honeyville flour online is the tastiest and also priced the best. Still expensive, but bakes delicious dense muffins!

So, before I close, I will include another Paleo recipe that I modified to my liking. It is so yummy! You will find that baking with almond flour yields a very filling dense muffin! These are very satisfying! So, give almond flour a try! I think you will love these!

Pumpkin Raisin Muffins (18 muffins)

  • 2 cups almond flour
  • 1 small can pumpkin
  • 4 eggs
  • 1/2 cup almond butter (this is not butter, it’s like peanut butter only almond butter)
  • 1/3 cup honey
  • 2 tsp baking power
  • 2 rounded tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp ginger
  • 1/2 tsp salt
  • 3/4 – 1 cup raisins
  • Walnut Halves

Directions:

Preheat oven to 350 F. Combine all the ingredients and mix well. Use muffin liners and line the muffin tin. Fill the liners a bit more than 3/4, almost filled, these type of muffins don’t rise as high as regular flour muffins. Add a walnuts half on the top. Bake 35 minutes or till toothpick comes out clean.

So, this week, I’ve got quite a few new things going on. I just bought a new Nikon D7000 to replace my old Nikon D70. (I can’t wait to blog about this!) I’m anxious to get out there and take pictures…the spring flowers can’t pop up fast enough! AND, it should take some awesome photos of my new jewelry ( LindaGeez jewelry) with my new macro lens! And, I have some new jewelry I’m finishing up, and new recipes to try and the list goes on!

07 You Learn Listen to the tune! In typical Linda style, when I like something, I tend to really get carried away! It is so fun to collect! And what makes it even more fun, the big guy likes to collect too….one influencing the other, a dangerous combo! So we like to go to vintage shops, search for estate sales, look for rare finds and enjoy the history these old pieces offer us….and boy oh boy, if some of these old things could tell us their stories!

These are some of my letterpress wooden letters collection! (I have metal letters too!) My collection began by accident when I found some letters in a local vintage shop. We were shopping around Valentine’s Day and I found the letters XOXO! I thought, how cute to put these letters on my fireplace mantle! Well, it became an obsession for me…and the search was on! I began searching for big letters, small letters, upper case letters, lower case letters, metal letters, wood letters, drawers for letters….anything letterpress. (I’ve always been fascinated with the printing industry) This is my drawer of letters, I sort alphabetically (just like my spices!). So, in addition to my collection, I’m enjoying selling some of my letters also! It’s fun to see other people too enjoying these letters! I sometimes think….maybe I’m getting a little carried away, but just as I think I might have too many letters around the house, I have someone loving these letters too….and so the collection continues to grow!

But, I’m not the only one that has a love for collecting. So does the big guy….aka Mike! He LOVES radios and clocks! The cool thing about his collection, he collects broken radios and clocks and then repairs them! These are just a few of his pieces!

Fifty Ways

question05 50 Ways to Say Goodbye (listen to the tune) Where have I been? Well, I have too many hobbies and work too many hours….don’t we all! Time has escaped me and I have not hardly written at all! So, what has driven me to the keyboard? Well, there are more than 50 reasons I am saying goodbye to processed foods and reducing carbs.

Fast forward, It’s been one month! I have had no pasta, no rice, no crackers, and the only flour I’ve had has been in the pumpkin muffins that I bake on Saturdays! This is a pretty big deal, not because I don’t like to eat healthy, more because the amount of time I am spending shopping for fresh vegetables, fruits and cooking! The hours in the kitchen have been increased! It’s hard to fit everything in on a daily basis. It seems dinner is a little later now, there are more trips to the grocery store, and no easy does it I think I will stop at Panda Express on the way home with dinner! But, I am dedicated to this new lifestyle change for health reasons and to help me lose weight. So goodbye to Panera Bread, Starbucks, Panda Express, Olive Garden, and more….haven’t been there in a month!

The great part is Mike is doing this with me! That makes it so much nicer! Although he isn’t a cook, he is 100% in agreement to try to eat healthier, and will eat anything I prepare! This is quite a feat for the big cookie monster that he is! He does have a sweet tooth, that is for sure! And along with a better eating lifestyle, we are BOTH hitting the exercise room….elliptical and exercise bike, here I come. Weights are being added again next week!

So, I thought along with writing about my hobbies, my letterpress letter collection, my wee jewelry making business, and my family, I thought I’d add a bit of our new healthy exercise and dieting lifestyle change. I must admit, I’m never really hungry, but sometimes I do miss pasta and warm crispy bread and butter! (I do still count calories too, I have an App for my phone so I’m always aware) And, I feel like I can’t fit another minute into my day! Sometimes it’s after 9:00 pm before I get into my exercise room. But, today is Saturday, and both Mike and I both have our exercising done already today!

So, I’d like to share one of my new recipes that I made today, then I’m off to the kitchen to prepare our dinner!

I used Bob’s Red Mill Flour Meal, however, it is quite costly, it was just about $12.00 for less than 1 pound at the store. So, now that I have tried almond flour and I like the results and taste, I am going to use Honeyville Almond Flour, it’s supposed to be even more tasty! It’s $31.99 for 5 pounds….still expensive, but how about that Starbucks….it’s all the way you look at things! http://store.honeyvillegrain.com Also, I just put walnuts on the top only to reduce the calorie content of the muffin. And, a little less honey too.

So, here’s the Recipe

muffinsAlmond Meal Banana Nut Muffins

  • 3 cups blanched almond flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 tsp baking powder
  • 3 eggs
  • 2-3 (I used 3) bananas mashed
  • 1/2 c honey
  • 1/4 melted coconut oil or butter (I used butter, next time I’m trying olive oil)
  • 1 tsp vanilla extract (darn, I forgot that)
  • 1/4 chopped nuts (I just put a whole one or pieces on the top

03 Daydream Believer

The Monkees

What kind of girl would I be if I didn’t honor Davy Jones! A little bit of my yesteryears creeps in my memory. Of course Suze and me loved The Monkees! We sang their songs and decorated our room with their pictures. AND, as any little sister would do (sorry Suze, I always mention that she is older than me), I would love what Suze loved! So, when she said  “Let’s tape Micky Dolenz pic up on our bedroom door”…who was little me to disagree!  Hahaha! Actually, I don’t remember who I thought was “cuter” him or Davy, I just knew I loved all of them too! So, I thought I would share a favorite song of ours that we enjoyed!  And a daydreamer I guess I will always be. Whether it was yesterday, or even today, I still admit, I am a daydreamer!

So, speaking of daydreaming, this blog will be all about things I dream about! I think dreams are healthy. Dreams help us escape from the day to day dreariness that we all must endure! And, although I don’t have enough pages for all the dreams that I have, I will write about one dream that none of us can change in any way!  I dream about TIME! Yes TIME! There is nothing we could do about the time we have….we can’t add more time to our day, add more time to our lives, take any bad times away, or even change the times we have made a mistake or two! No time tunnel here, although that would sure be fun! Enjoy this oldie 2-12 The Time Has Come Today Am I aging myself? Well, it wouldn’t be the first time today I heard that! Does this sound familiar all the “M’s” in the office!

14 Born To Be Wild And, another thing spring weather tends to do to me, is make me dream of a road trip! The destination is not as important and the ride, the adventure, the escape from reality! It’s hard to pick a favorite vacation, we have had so many lovely ones….but I do have a couple of favorites! I LOVED traveling to Yellowstone National Park! AND, I also loved our first real motorcycle adventure…traveling on Blue Ridge Parkway, through the Great Smoky Mountains. Nothing ever compared to the freedom I felt on that vacation! Sony Discman in pocket (pre iPod days), trailer in the back, holding on to the big guy without a care in the world! Besides the sites and the carefree days we had, it was great because I didn’t have to even look at the map for him….I’m not a map person, in fact I think I hate it! Total freedom! Oh, forgive me, I was just daydreaming for a moment there!

I must say, after the holidays when I am off of work, Christmas is over and we are all just relaxing, I become quite reflective! To me, just a regular, ordinary beginning of the year mood. I look back at the year, count my blessings, think about the future,  and ponder about areas where I can approve my life for myself and others around me.

Amongst all this thinking, I thought of my blog! After all, why not fill my mind with just one more thought of things I’m not doing! (ha, you can see my daily meditation is not is place, as my mind is racing continually with thoughts!) But, soon I will be back into the daily groove, but for now… this is fun stuff, and little bits of stuff that is just fun to share!

So, I think this year my children and grandchildren, we’re off Santa’s watch list! (Oh, let me clarify! Our Little Jaden, he was never on the watch list, always a good boy! Probably very high on Santas Good Boy list!) Yep, everyone was really sweet this year! First our son, painted our whole family room! Quite an undertaking, and he did a great job! Kudos to Michael! The family room is warm and extra friendly now with shades of ivory, warm tan and a lovely deep roasted coffee color. As much as I feel that my judgement for color and decorating ideas are really comfy cozy and inviting,  the roasted coffee color suggestion was totally his. As much as I was uncertain, I gave the kid a break and he was right! So, what was the moment I gave in….Ma, if you don’t like it, I’ll redo it! Sold! How could I resist! And now, I can’t wait for him to do the rest of the house! woohoo!

After the painting was done, and everything looked so pretty, even Mike got into the creative spirit! He made these great coasters out of exotic zebra wood that houses lighting to shine under our beautiful bottles on our shelves! I have to get some good photos to post!

Woodstock Farmers Market

Picked fresh this morning!

Ok, so I think I’ve turned Mike into a foodie too! His last words to me this morning before he left for work were, “Well, maybe if you’re up early enough you can go get some corn at the Farmers Market.”  It was one of those days, I wanted to start the day with cleaning and other things, but I thought, well, I better get the Farmers Market in before the corn is all gone!

So, I’m really a country girl! I’ve never lived in a big city, nor do I ever have a desire to! If I didn’t have to work for a living, I’d be living out in the middle of nowhere on a big farm! (Louise, remember we wanted an herb farm in the 80’s, man, should have done it!) But, since Mike and I are like most of the world, we have to live somewhat close to our jobs! We chose to move to a small town, McHenry, to raise our children in the 80’s….escaping Schaumburg which was once the small town we grew up in, as it was filled with commercial businesses and shopping malls. Well here we are 30 years later and have moved around within this beautiful county that has become our hometown! But I must say, Woodstock has become my favorite home town!!! It has a wonderful town square. Everyone here knows “the Square”! There is a pretty gazebo in the center, and park benches, statues honoring the soldiers ( Jaden used to think the Civil War happened right there in the Square, he loves the Square), nice restaurants, The Opera House, paved brick roads, people walking their dogs…..ah, I just love it, a great community! AND, that is where the Farmers market is held a couple days a week…on the brick road in Woodstock Square!

So, I always ask the farmers what their favorite is! They are all wonderful people! Today, I bought great colorful heirloom tomatoes, some wonderfully sweet grapes, potato cheddar chive bread, pumpkin break and of course what I went for the corn! Well, today, it’s going to be hard to pick a favorite, as they are all great! The potato cheddar chive bread….well the farmer recommended a crisp melted Grilled Cheese sandwish, oh wow! And the tomatoes, I can’t wait to make my Tortellini Pesto salad with tomatoes, black olives,  fresh mozzarella  and pesto…a great accompaniment to any grilled meal!  The pumpkin bread, a yummy thing to pack for breakfast or for an afternoon snack! AND THE CORN!

This corn is unlike any other I’ve every tasted, it’s called Mirai Sweet Corn. (http://www.twingardenfarms.com/) The first time we went to purchase the corn, we wondered, how great could this corn be! So, the young girl offered us a taste! Here I am nibbling off the raw corn in the middle of the farmers market! Well, it was tender and sweet and I was certainly impressed! So we packed a bag with a half dozen and went off on our way! So today, I splurged and bought a whole dozen! We have a lot of corn eatin’ to do! Somehow, I think this doesn’t qualify for my lo-cal diet, but I might have to cut something else out!

So, now that I’ve got my veggies it’s time to go shopping for the rest of the yummies! Maybe a great grilled chicken made into a fresh salad with heirloom tomatoes, grapes, walnuts and some great blue cheese dressing! Maybe lunch will be grilled cheese on the Potato Cheddar Chive Bread! And maybe a steak with sauteed mushrooms and onions along with fresh Mirai Corn. OK I have to stop thinking about food!

So, today after grocery shopping, I’ll be doing chores and figuring out my dinners! And tonight when all the chores and cooking is done….maybe I can get into my jewelry making! I have a necklace to make for someone at my day job and I’m in the mood to do some new creations! Most likely I won’t finish this weekend, as sometimes the projects take a while to finish! But I’ll sure enjoy myself along the way!

My Farmers Market Dinner!

Ok, so here’s what I did with all those fresh ingredients I bought this morning….and a few more! Fresh Romaine lettuce, hard boiled eggs, fresh ripe blueberries, ultra sweet grapes, cucumbers, colorful vine ripened heirloom tomatoes, fresh made croutons from Tuscan Herb bread, pecan bits,  juicy grilled chicken tenders and chunky Blue Cheese dressing! AND, sweet corn on the side! It was absolutely delicious!
